How TO Make Keto Fudge
Ok, this is a totally amazing discovery. I have been eating a Ketogenic Diet (high healthy fats, low carb, moderate protein) for a while now. The premise of a Keto diet is that you switch over from being a ‘sugar burner’ – i.e. primarily burning carbs for fuel, to being a ‘fat burner’ – i.e. primarily burning Ketones (which comes from the breakdown of healthy fats). Think of it as a car running on diesel fuel vs gasoline. It’s just a different fuel source. The thing is our bodies, and our brains in particular, actually prefer to run off of fats over carbs and run way more efficiently that way. There are tons of benefits to a Keto diet, but I will leave that for another post.
For now, I want to share with you an awesome treat that has helped me to move into a state of ketosis (that fat burning state) – it takes a while for your body to make the transition. I did a consultation with Maria Emmerich, who is a Keto Queen. She introduced me to her version of Keto Fudge. I’m not a big fan of cocoa powder (upsets my stomach) so I played around with the tastes and ingredients I love and voilà – out pops Keto Coconut Bacon Fudge. I think you are gonna love it. AND it super simple to make and is ready to eat in less than 30 min. Can’t beat that.
And another thing, it is totally adaptable to a veggie or vegan diet – just leave out the bacon and you still have an awesome, amazing, satiating, high healthy fat, low carb, NO SUGAR treat.

- 1 cup coconut oil (soft but not liquid)
- 1/4 cup full fat canned coconut milk
- 1/4 cup Unsweetened Unsulfured Coconut Flakes (I like Bob’s Red Mill)
- 4 pieces of bacon
- 1 teaspoon Vanilla
- 1/2 teaspoon Celtic Sea Salt
- 10-15 drops (to taste) of NuNaturals Stevia
- Fry up the bacon until crispy. Drain and crumble.
- Toast the coconut flakes in a dry pan until golden brown.
- Mix the coconut oil, coconut milk, vanilla, Stevia, and salt in a bowl. I just mix it by hand using a small cooking whip, but you can also use a hand or counter mixer if you want. Blend well.
- Fold in the bacon and coconut flakes.
- Line the bottom of a low pan – like a loaf pan, casserole dish, or pie pan – with wax or parchment paper.
- Pour the fudge mixture into the pan and spread out evenly over the paper. Do not spread on the the sides or area where there is no paper.
- Place in freezer for 15 minutes or until just set.
- Remove from freezer and cut into 16 pieces.
- Place cut pieces into an airtight container and store back in the freezer. Fudge will liquify if left in a warm area.
